Pasta Carbonara and Spicy Turkey Sausage

Since I had beautiful home made egg noodles hanging out on my counter waiting for a recipe, I decided on this delicious and quick pasta recipe. To see my egg noodle recipe, go here.

Pasta Carbonara and Spicy Turkey Sausage
Ingredients:
1 Batch homemade egg noodles or 8 oz pappardelle or fettucine
2 c. frozen peas
1 tbsp olive oil
4 Spicy Italian Turkey Sausage Links
2 large egg yoks
1/2 c fat free half and half
1/2 c. grated parmesan cheese (plus more for serving)
salt and pepper to taste

Method:
Cook pasta according to package directions. If using homemade fresh pasta, it only takes about 5 minutes to cook, so don't start it too early. Add the peas during the last minute of cooing. Reserve 1/2 c. of the cooking water, drain the pasta and the peas, and return them to  the pot.

Meanwhile, heat the oil in a large skillet over medium high heat. Cook the sausages, turning occasionally, until cooked through (about 10 minutes).

In a medium bowl, whisk together the egg yolks, half and half, parmesan, 1/2 tsp salt, 1/2 tsp pepper. Add the egg mixture and reserved  cooking water to the pasta and peas in the pot. Cook over low heat, tossing gently till  sauce is slightly thickened and coats the pasta.

Serve with sausage and additional cheese.
